What have I been eating? 1/16/11 - 1/22/11

While I am taking part in my $50 a month spent on food grocery challenge, I will be documenting what I eat each week.  Some people have expressed concerns that I can't possible eat enough on just $50 a month.  I hope this type of documentation puts their fears to rest. 

January 16
Breakfast - toast with PB and bananas, fruit juice
Lunch - leftover tuna noodle casserole, milk
Dinner - whitefish, potato, salad, milk

January 17
Breakfast - cereal with milk
Lunch - leftover fish, salad
Dinner - rotisserie chicken, mashed potatoes, apple sauce, milk

January 18
Breakfast - cereal with milk
Lunch  - chipotle chicken wrap with lettuce and tomato
Dinner - chicken/rice/broccoli casserole, applesauce, milk

January 19
Breakfast - cereal with milk
Lunch - leftover chicken/rice/broccoli casserole, salad
Dinner - tomato soup, grilled cheese sandwich, milk

January 20
Breakfast - Atkins bar (got for free in the mail)
Lunch - leftover chicken/rice/broccoli casserole, salad
Dinner - mac and cheese, salad, milk

January 21
Breakfast - cereal with milk
Lunch - chipotle chicken wrap with lettuce and tomato
Dinner -baked sweet potato, salad, milk

January 22
Breakfast/Lunch - eggs, fried tomato, toast, OJ
Dinner - banana/pear/OJ smoothie, shrimp cocktail

  1. Because I dont see many of these items on your grocery lists, you must have a well stocked freezer and fridge.

  2. Ya I see. Good idea. Be sure not to become anemic. A vitamin daily may help.

Maureen, a lot of the stuff I had bought this month - eggs, bacon, chicken, broccoli, eggs, lettuce, tomatoes, fruit, cereal, milk, mac and cheese etc. The shrimp, apple sauce, PB, fish, and American cheese I already had. I actually have a lot of applesauce because I can my own in the fall... and I have lots of fish in the freezer because I love fish so I try to keep a variety on hand.

    Anonymous, I am intrigued... why do you think I could be at risk for anemia. Should I be adding something else into my diet? I do eat red meat occasionally... anything else?

  4. Iron rich foods. There are good lists on the net. Very few people get enough and can get cancer ect.. Good luck. I had it so I know. It makes you tired and you get sick easier.
